Serve this wine slightly chilled to unlock its full bouquet of zesty citrus fruits, green apple, chamomile and focused minerality. It’s a classic, well-rounded taste of Chablis, with an electric undercurrent of acidity and steely notes of flint and sea salt. On the palate, juicy notes of melon, lemon and apple come to the fore, with hints of white flowers and oak-imparted smoke. Time in the cellar will serve it well, but it is perfectly enjoyable in its youth. Consider serving it with delicate seafood, such as poached fish, or a creamy asparagus dish.
