TASTING NOTES: The garrigue is the signature influence here, adding woody herbal notes (thyme, oregano, sage) to the intense ripe sweet black cherry, vanilla pod. Firm and fruity medium-bodied red, with a deliciously warm, lengthy, spicy finish. A Cabernet/Merlot blend.


FOOD MATCH: Delicious with fruity dishes like hoi sin ribs, duck with plum sauce.

AND TO WASH IT DOWN…

Perhaps it’s the dried thyme that did it but the red we had with the cassoulet turned out to be remarkably appropriate thanks to the aromas of the garrigue, the sun-baked hillsides of the south of France where wild herbs like oregano and sage predominate.

It was Château Martinolles Limoux ‘Garriguet’ 2020 (€16.50, Molloys), a Languedoc blend of cabernet and merlot given some new oak seasoning.

It’s from Paul Mas, one of the region’s biggest producers, but it punches way above this price point. It’s from a hot region, of course, but Limoux is relatively high so there’s a distinct freshness to the fruit.
