Gert from Oud Beersel offered some of his Lambic for us to use in a Lervig forward project. We are known for our stouts around the world. Gert is known for his passion of spontaneous fermentation. So we decided to produce a black Lambic stout. To do this we first brewed a stout that we thought would work well with the sourness and dryness of a Lambic. We blend these two together into Akevitt barrels and aged it for 5 months.
